Abstract

The definitions "professional training of future specialists in hotel and restaurant business", "principle", "principles of training", "principles of scientific training" are implicated. Professional training of future specialists in hotel and restaurant business is understood as an organized, continuous and purposeful process of formation and development of professional competencies necessary for professional activity, which is carried out in higher education establishments of various forms of ownership and is aimed at obtaining qualifications by future specialists. programs that will ensure the successful performance of official duties.

Researchers' views on the problems of training future specialists in service sector in higher education institutions are studied and the principles of their professional training are differentiated.   It is emphasized that certain principles can be divided into main groups: general didactic, specific-professional, system-personal. To the group of general didactic we include the following: fundamentalization, scientificity, awareness and thoroughness of knowledge, integrity, continuity, continuity, academic freedom, intersectoral and transdisciplinary integrativeness, international integration, unity of traditional and innovative, creativity). Specific-professional group includes: professionalism and professional mobility, duality and practical orientation of education, career design of future professional activity, initiative and freedom of action, use of forms and technologies of non-formal learning, synergy of science, practice and innovative technologies, synthesis of technological knowledge based on interdisciplinarity, security efficiency, information efficiency, efficiency. System-personal group includes the following: personal development, professional self-development, purposefulness and motivation, socialization, reflection and essentialism, cultural conformity, moral and ethical, axiological, foreign language professionalization, ethno-nationality and multiculturalism).
